Ferdinando Principiano's family has farmed in Barolo for generations, but unlike most of his neighbors, he works organically and makes wine the old, honest way: no chemicals in the vineyard, wild yeasts, and not a drop of added sulfur. The result is Dolcetto stripped to pure joy, fresh, fragrant, and bursting with cherry, blueberry, and violets, with a little dried-herb and chocolate character, soft tannins, and bright acidity.
