His family has farmed these slopes since the 1700s, seven generations, back when the farm raised wheat and silkworms alongside vines, and his father Bruno was the first to put the family name on a bottle after World War II. Paolo runs the estate with the same stubborn, hands-on standards, and America's most discerning importers seek him out for it.

Instead of machine harvesting, every grape is picked by hand from hillside vines. Instead of rushing it to market, he ferments slow and cold in steel and lets the wine rest until winter's end, bottling it young to lock in its snap.

What pours out strips away every flavorless trope of the grape: crisp pear, quince, and citrus over a stony mineral core, real texture, a bright, clean finish, at a featherlight 11.5% that makes the second glass automatic.
