The 2021 growing season offered a classic, cool-climate revival that required patience and precision. The Dönnhoff team harvested late into November, allowing the grapes to reach ideal physiological maturity while retaining remarkable natural acidity. In the cellar, Cornelius allowed the cool must to rest on the extract-rich skins before fermenting in traditional large stückfass oak casks. This gentle extraction naturally rounded out the high acidity, creating an unbelievable balance between weightless sweetness, tense minerality, and rich fruit concentration.
