In Detail

Crafted by the former President of Burgundy’s Winemakers (CAVB)—a sommelier-turned-vigneron obsessed with purity

Who do the winemakers of Burgundy trust to lead them? They trust Thiébault Huber. As the former President of the CAVB (Confederation of Appellations and Winemakers of Burgundy), Huber is literally the "vigneron's vigneron." But before he was the boss of Burgundy politics, he was a sommelier at Michelin-starred restaurants like Le Moulin de Mougins. That background is the key to understanding this wine: it is built for the dinner table, not just the cellar.

Huber revitalized his family’s estate in 1994, immediately steering it toward rigorous Biodynamics (Demeter certified). He doesn't just farm grapes; he manicures an ecosystem. "Les Combins" is his secret weapon in the Côte Chalonnaise—a steep, south-facing amphitheater of clay and limestone that captures the sun while retaining electric acidity.

While many producers treat Mercurey as a rustic country cousin to Pommard, Huber treats it with white-glove delicacy. He uses low intervention and infusion rather than extraction to craft a wine that vibrates with energy. The 2021 vintage, with its cooler temperatures, played right into his stylistic wheelhouse, producing a 1er Cru of shocking elegance and transparency. This is "insider" Burgundy at its finest: high pedigree, low pretension, and farmed by the man the rest of the region looks up to.
