But before he was the boss of Burgundy politics, he was a sommelier at Michelin-starred restaurants like Le Moulin de Mougins. Huber revitalized his family’s estate in 1994, immediately steering it toward rigorous Biodynamics (Demeter certified). He doesn't just farm grapes; he manicures an ecosystem.
