When young vigneron Antoine Gouffier took over the property in 2018, he brought a sharp focus on soil vitality and natural precision, establishing Bouchot as one of the most exciting producers in France.

The secret to the 'Terres Blanches' cuvée lies directly beneath the 35- to 40-year-old vines in Saint-Andelain. These slopes are composed of Kimmeridgian marl, an ancient layer of white chalk and clay packed with fossilized prehistoric oysters, identical to the grandest vineyard sites in Chablis and Sancerre. Gouffier ferments with wild yeasts exclusively in stainless steel tanks, avoiding oak barrels entirely to preserve the unadulterated expression of this prehistoric seabed.

Vinous awarded the 2021 vintage 92 points, celebrating its "round and silky" texture, elderflower aromatics, and appetizing thread of chalky acidity. The palate opens with crisp green apple, white peach, and citrus zest, flowing seamlessly into a mouthwatering, mineral-laced finish that lingers long after each sip.
