In this rugged, razor-sharp terrain near the Slovenian border, soil is practically nonexistent. Vine roots must drill deep into subterranean rock to survive. Zidarich isn't just a legendary winemaker—he is an architect of terroir who pushed natural winemaking to its absolute extreme with his legendary project: Kamen.
"Kamen" is the Slovenian word for stone, and this wine is literally shaped by it. Zidarich hand-carved massive fermentation vats directly out of solid local Carso limestone blocks. He places whole clusters of native Vitovska grapes inside these stone vessels, allowing native yeasts and skin contact to extract the raw, wild essence of the rock itself before aging in Slavonian oak casks.
The 2020 Zidarich Vitovska Kamen is a revelatory experience. Pouring a glowing amber-gold, it leaps from the glass with dried persimmon, candied ginger, wild sage, and crushed flint. On the palate, tactile tea-leaf tannins blend effortlessly with vibrant acidity and a lingering, bone-dry mineral grip. It is raw, elegant, and profoundly unique.
Because carving stone vats and cultivating high-altitude limestone terraces is painstaking work, production of Kamen is extremely limited. Wine connoisseurs around the world hunt down these legendary bottles for their cellars.
