The Le Meix des Ouches vineyard sits immediately below the 1er Cru Champonnet and Champeaux in the northern sector of the village. The ancient stone walls that enclose these vines act as a solar trap, ensuring perfect ripeness even in cooler years, while the nearby Combe de Lavaux funnels fresh air through the vines to preserve acidity.
Domaine du Couvent (formerly the historic Domaine des Varoilles) has been revitalized under Philippe Chéron, who is crafting wines of serious density and ambition. He treats this specific plot like a Grand Cru, farming the 65-year-old vines (planted in 1955) with meticulous care. The result is a wine that consistently outperforms its classification.
The 2020 vintage, known for its small berries and inky concentration, turned this "Clos" into a powerhouse. The heat of the vintage combined with the heat-trapping walls produced a wine of massive structure and depth. It is dark, brooding, and profoundly earthy—a "winter warmer" that captures the very soul of Gevrey-Chambertin without the Premier Cru price tag.
