Born on Dagueneau's Hill

2020 Domaine du Bouchot Les Caillottes Pouilly-Fume

Some of the greatest Sauvignon Blanc on earth comes from a single hill in the village of Saint-Andelain — the same hallowed slope that made Didier Dagueneau a cult legend. Domaine du Bouchot farms its share of that hillside the old, painstaking way: entirely by hand, biodynamically, with wild-yeast fermentations and barely a whisper of added sulfur. In Detail

The lush, sun-filled 2020 Caillottes.

The result tastes like it was grown, not manufactured — pure, vivid, and bursting with life.

The 2020 is the hedonist's vintage. A warm, golden, sun-soaked year filled the grapes with riper, rounder fruit than Pouilly-Fumé usually dares: golden pear, white peach, and orange blossom, all framed by the chalky, saline grip of the estate's limestone. There's real flesh and warmth here, yet it never tips into heaviness — a current of bright acidity keeps the whole thing singing.

This is the bottle to open tonight, not bury in a cellar — lush, mouth-filling, ready to charm. Pour it with grilled fish, roast chicken, or a wedge of soft goat cheese and watch it vanish.
