2019 in Côte de Beaune was a vintage that rewarded restraint. Unlike years of opulence, 2019 favored winemakers who respected site over intensity. In Bitouzet’s hands, Clos des Chênes emerged from low yields and extended sorting into a wine of disposition and texture. Their cellar approach is equally disciplined: native yeast fermentations, delicate extraction, and élevage in French oak with minimal new wood, designed to amplify, not dominate, the site’s voice.
