Les Vaudayants is a single lieu-dit in Bouzy, one of Champagne’s most respected Grand Cru villages for Pinot Noir. Most people only encounter Bouzy through Champagne — as structure in a blend, as backbone under bubbles. Georges Rémy’s work asks a different question: what happens when that same fruit is treated with the seriousness of a real red wine?
Rémy is not a hobbyist making a curiosity bottle. He spent years as a viticultural consultant before committing fully to his own domaine, and his red wines were central to that decision from the beginning. Les Vaudayants, a family parcel planted in 1975 with massal selection, is where the project started — and it remains the emotional and technical core of his work.
The vineyard is farmed organically and biodynamically, with the explicit goal of preserving freshness and definition. In the cellar, the approach is unmistakably still-wine–driven: gentle extraction, fermentation and élevage in oak, time on fine lees, and the care and attention normally lathered onto a Burgundy Grand Cru red.
The 2018 vintage provided natural ripeness, but the wine never chases power. What Rémy is after is clarity. Aromas are laser-sharp red cherry, wild strawberry, dried rose, and subtle spice, with a savory undertone that reflects Bouzy’s chalk-and-clay soils.
On the palate, the wine is taut and precise. Acidity is bright, tannins are fine and chalky, and the fruit stays firmly in the red spectrum. There’s no new-oak sweetness, no plush mid-palate, no attempt to mimic Burgundy through excess. Instead, the wine holds a clean line from entry to finish, with a mineral edge that keeps it serious and food-ready.
Les Vaudayants isn’t trying to redefine Champagne. It’s simply revealing one of its most privileged Pinot sites in its purest, least mediated form.
And at this scale, once it’s gone, it’s actually gone.
