He walked away from modern chemical farming and heavy oak extraction, choosing instead to strip away every artificial barrier between the vine and the bottle.
Principiano’s approach is defiantly low-intervention: organic farming, hand-harvesting, foot-treading the grapes, and fermenting with native yeasts without added sulfur. Aging takes place exclusively in large, neutral Slavonian oak barrels to ensure the raw, iron-rich limestone soils of Serralunga speak without distortion. Every step is executed to capture the soulful, unfiltered energy of his high-elevation vines.
The 2018 Serralunga Barolo perfectly captures this natural philosophy. It pours a deep ruby, opening with expressive notes of dark sour cherry, damp earth, crushed rose, and dried pipe tobacco.
