In the Grand Cru village of Ambonnay, Paul Déthune preserves Champagne’s artisanal history with the Cuvée à l’Ancienne. Every bottle is sealed using the historic ficelage method—hand-tied with hemp string and secured with a wax seal—requiring small shears to open and reviving an 18th-century cellar tradition.
The 2015 vintage is an equal blend of Pinot Noir and Chardonnay sourced entirely from the estate’s Grand Cru vines in Ambonnay. Vinified and aged in 205-liter oak barrels crafted from local Montagne de Reims timber, the wine undergoes secondary fermentation under natural cork rather than crown caps, deepening its micro-oxygenation and textural complexity.
The result is a broad, vinous Champagne of exceptional character and depth. Warm orchard fruit, honeyed richness, and refined barrel spice are held upright by Ambonnay’s signature mineral spine. Produced in tiny quantities, this represents the absolute pinnacle of traditional grower Champagne.
