Pascal Cotat's plot got declassified in the dispute, and he kept farming it anyway. Same vines, same wine, lesser name on the bottle.

Those vines are around eighty years old, on a tiny parcel of limestone and clay above Chavignol. He picks them by hand and very late, pushing ripeness past the point most growers would accept, because that is what gives his wines their weight.

Then he treats the rosé exactly like a white. Direct press, wild yeast, and fermentation in enormous old demi-muids that are themselves over eighty years old. Nothing new, nothing stainless. It goes into bottle unfined and unfiltered.

The Cotat name carries weight for a reason. Two brothers, Paul and Francis, made wine side by side in the same cellar under separate labels until the French government told them to stop. Their sons Pascal and François split the operation, and Pascal built his own facility. His wines run a touch riper and more mineral than his cousin's.

What you get here is not a poolside wine. It has real structure, saline grip, and a finish that keeps going. Drink it now, or hold it for a few decades.
